Cheese 'n tomato

  • 4
    large ripe tomatoes
  • 300
    firm ricotta
  • handful of fresh basil and a few snipped chives
  • extra virgin olive oil, for drizzling
  • salt and freshly ground black pepper


Slice the tomatoes and the ricotta into equally thick slices.
Stack the tomato and ricotta slices alternately to make a tower, starting and ending with a tomato slice.
Drizzle with olive oil and sprinkle with basil and snipped chives.
Season with salt and freshly ground black pepper.
Serve with crusty bread for a quick lunch.
