Cheese muffins

  • 250
    cake flour, sifted
  • 12
    baking powder
  • pinch salt and freshly ground black pepper
  • 2
    mustard powder
  • 500
    grated Cheddar cheese
  • 1
    medium onion, chopped
  • 2
    large cloves garlic, crushed
  • oil
  • 15
    chopped fresh mixed herbs or
  • 5
    dried herbs
  • 1
    egg and milk or water
  • poppy seeds


Preheat the oven to 200 °C and spray a muffin tin with non-stick spray. Sift the dry ingredients together and add the cheese. Fry the onion and garlic in a little oil until tender and glossy. Add the herbs. Remove the pan from the heat and leave to cool. Beat the egg lightly and pour into a cup. Add enough water or milk to make up 250 ml (1 c). Add the onion and garlic as well as the egg mixture to the dry ingredients and stir until just blended. Spoon into the prepared muffin tins and sprinkle with the poppy seeds. Bake for about 15 to 20 minutes until done. Leave to cool in the muffin tins for 10 minutes before turning out. Cool and serve.
