Ingredients (9)

500.00 ml flour — cake
1.00 ml salt
2.00 eggs — just the yolks
65.00 ml water
150.00 g butter
20.00 colchester cheese — slices
30.00 ml fresh parsley — chopped
30.00 ml milk
45.00 ml sesame seeds

Method:

Preheat oven to 220 degrees. Grease a baking tray.
Sift together flour and salt. Mix together egg yolks and water then make a well in the centre of the flour. Pour in milk and egg mixture and dot butter around the edge of the four.
Quickly knead all the ingredients together to make a dough, wrap in clingwrap and refrigerate for 1 hour.
Roll out pastry on a lightly floured surface, into a 30 x 40 cm rectangle. Cut into 20 triangles.
Cut each Colchester cheese slice into two equal triangles and place two triangles on each triangle of pastry. Sprinkle cheese with parsley and roll into croissant shapes.
Beat remaining egg yolk with milk, brush over croissants and sprinkle with sesame seeds.
Transfer to a baking tray and bake in oven for 15 to 20 minutes until golden.
