CRUST
150.00 g potatoes — crisps, crushed
40.00 g cheese — grated
125.00 ml cheese biscuits
80.00 ml butter — melted
FILLING
3.00 eggs — extra-large, seperated
15.00 ml flour — cake
2.00 ml salt
1.00 ml nutmeg — ground
250.00 ml milk — full cream
1.00 onion — small, grated
250.00 ml cheese — grated
100.00 g ham — diced
15.00 ml fresh parsley — chopped
3.00 bacon — rashers, finely chopped, fried

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a round 24 x 5 cm pie dish with non-stick spray. Mix all the ingredients for the crust together and press onto the bottom and along the sides of the pie dish. Chill until needed. Whisk the egg yolks until light. Add the cake flour, salt and nutmeg and beat well. Beat in the milk and add the remaining ingredients, except the egg whites. Mix well. Whisk the egg whites until soft peaks are formed and fold into the mixture. Pour into the prepared crust and bake for 40 minutes or until golden brown and set. Cool slightly and serve with a salad.
