Ingredients (15)

CRUST
65.00 g butter
110.00 g flour — cake
125.00 ml cheddar cheese — grated
30.00 ml water — cold
FILLING
45.00 g butter
15.00 ml oil
750.00 g onion — medium, sliced
35.00 ml flour — cake
2.00 eggs — large
125.00 ml cream — or milk
5.00 ml salt
1.00 ml nutmeg — ground
2.00 ml black pepper — freshly ground
50.00 g cheddar cheese — grated
15.00 g butter

Method:

1. CRUST: Rub the butter into the flour until mixture resembles fine breadcrumbs. Mix in the cheese and water to form a firm dough. Press the mixture evenly over the base and sides of a greased flan dish. Chill for 30 minutes.
2. Prick the dough with a fork and bake blind in a preheated oven at 200 ºC for 10 minutes. Remove from the oven and set aside.
3. FILLING: While pastry is chilling, heat butter and oil in a heavy-based frying pan. Add onion and cook over a very low heat, stirring occasionally, until yellow and tender. (This takes about 1 hour and may be done the day before. When cooked, cover the onion and put it in the fridge.)
3. Stir in the flour and cook for 2 to 3 minutes. Set aside to cool slightly.
Reduce oven temperature to 190 ºC.
4. Beat the eggs, cream and seasoning together. Combine with the onion and half of the cheese. Pour into prepared pie crust, sprinkle with remaining cheese and dot with butter. Bake in preheated oven at 190 ºC for 25 to 30 minutes until golden brown.
