Cheese-and-herb bites

  • sunflower oil for frying
  • 1
    sachet crumpet mix
  • milk (see directions on box)
  • egg (see directions on box)
  • 20
    parsley, freshly chopped
  • 40
    chives, freshly snipped
  • salt

    smooth cream cheese
  • 50
    mature Cheddar cheese, finely grated

    peppadews, chopped (optional)

    ham, chopped (optional)

Heat a little oil in a large frying pan. Mix 1 sachet of crumpet mix with the quantity of milk and egg indicated on the box. Blend to form a smooth batter. Mix in the parsley, 20 ml chives and salt to taste. Add small spoonfuls of batter to the pan and fry over medium heat until bubbles appear on the surface of the batter. Turn over and cook the other side. Remove from the pan and set aside to cool. Repeat with remaining batter. FILLING Mix together remaining chives and filling ingredients. Place a teaspoonful of filling on to half of the prepared crumpets. Top with remaining crumpets. Chill until ready to serve. Makes 12-14.
