Ingredients (11)

sunflower oil — for frying
1.00 crumpet mix
milk
eggs
20.00 ml fresh parsley — chopped
40.00 ml fresh chives — freshly snipped
salt
FILLING
200.00 ml cream cheese — smooth
50.00 ml mature cheddar cheese — finely grated
4.00 peppadews — chopped
50.00 ml ham — chopped

Method:

Heat a little oil in a large frying pan. Mix 1 sachet of crumpet mix with the quantity of milk and egg indicated on the box. Blend to form a smooth batter. Mix in the parsley, 20 ml chives and salt to taste.
Add small spoonfuls of batter to the pan and fry over medium heat until bubbles appear on the surface of the batter. Turn over and cook the other side. Remove from the pan and set aside to cool. Repeat with remaining batter.
FILLING
Mix together remaining chives and filling ingredients. Place a teaspoonful of filling on to half of the prepared crumpets. Top with remaining crumpets. Chill until ready to serve. Makes 12-14.
