Ingredients (10)

300.00 g flour — cake
20.00 ml Baking powder
3.00 ml mustard — powder
2.00 ml salt
30.00 ml sugar
75.00 g mature cheddar cheese — grated
50.00 ml fresh chives — chopped
300.00 ml milk
1.00 eggs — large, lightly beaten
60.00 g butter — melted

Method:

1. Sift together the dry ingredients and add the sugar, cheese and chives.
2. Combine the milk, egg and butter.
3. Make a hollow in the centre of the dry ingredients and pour in the liquid mixture, stirring until just combined.
4. Spoon the batter into a greased muffin pan and bake in a preheated 200 ºC oven for 20 to 25 minutes.

VARIATION
Add 125 g crispy fried bacon bits or four slices of roughly chopped salami to the batter before baking, or simply substitute the chives with chopped parsley or spring onions.
