Cheese Shortbread

  • 100 g Clover butter, softened
  • 100 g plain flour
  • ½ teaspoon salt
  • Pinch cayenne pepper
  • 2 egg yolk
  • 100 g Clover mature cheddar, finely grated


Preheat the oven to 180°C. In a bowl, cream the butter. Add the flour, salt and cayenne pepper and blend together well. Add the egg yolk and blend until the dough forms a soft ball. Mix in the cheese thoroughly. Place the dough onto a baking tray and using the back of a metal spoon, shape into 2 x 10 cm squares about 1 cm thick. Use a sharp knife and cut diagonally into 4 even triangles. Separate the triangles slightly with the knife. Bake for ± 25 minutes or until golden. If the triangles join together during cooking, separate with a knife while still hot. Cool for about 5 minutes on the baking tray then turn out on a cooling rack. Makes 2 large triangles. Cut triangles in 4 each or more if desired. Store in an airtight container.
