Ingredients (4)

50.00 g butter
50.00 ml flour — cake
400.00 ml milk
200.00 ml cheddar cheese — or mature cheddar cheese, grated

Method:

1. Put the butter in a microwave-safe container and heat on full power for 30 seconds, until the butter melts.

2. Remove from the microwave and stir in the flour. Cook on full power for 30 seconds.
3. Remove from the microwave and stir in the milk gradually, using a fork or small whisk. Once all the milk has been added, return the jug to the microwave and cook on full power for 30 seconds before stirring again. Continue to cook, stirring every 30 seconds until the sauce has thickened and has a smooth consistency.
4. Stir in the cheese and season to taste with salt, a pinch of dried mustard and freshly ground black pepper. Cover with cling-film until you are ready to use it.
Makes 450ml.
