These flavourful muffins make a great tea-time snack or lunch box filler.

Ingredients (9)

500.00 ml flour — cake
10.00 ml Baking powder
salt — pinch
5.00 ml garlic and herb seasoning
1.00 eggs — extra-large
100.00 ml sunflower oil
200.00 ml milk — or water
200.00 ml chakalaka
100.00 g cheddar cheese — grated

Method:

Preheat the oven to 180ºC.

Grease the hollows of a muffin pan with margarine or spray with non-stick spray.

Sift all the dry ingredients together.

Mix the egg, oil and milk or water together and mix lightly with the flour mixture.

Spoon a large tablespoonful of the batter into each hollow of the muffin pan.

Spoon a tablespoonful of chakalaka on top of the batter and sprinkle with grated cheese.

Bake for about 20 minutes or until the muffins are done (a skewer inserted will come out clean).

Serve hot.
These muffins are so deliciously moist and flavoursome, they can be served as is.
