Ingredients (6)

1.00 swiss roll — loaf, sliced
410.00 g fruit cocktail
1.00 Litres custard — long life
160.00 g jelly — red
125.00 ml cream — long life
coconut — toasted or chopped nuts

Method:

1. In a glass bowl arrange Swiss roll slices at the bottom and sides.
2. Spoon fruit cocktail onto Swiss roll. Pour custard over fruit.
3. Make jelly by dissolving it in 500 ml (2 cups) boiling water and allow to set. Break set jelly by stirring with a fork and spooning over custard.
4. Whip cream until soft peaks form and spread over custard.
5. If desired, decorate top with toasted coconut or chopped nuts.
6. Refrigerate overnight.
