600.00 g cauliflower
salt
50.00 ml butter
100.00 ml flour — cake
500.00 ml milk
5.00 ml mustard — powder
2.00 ml nutmeg — ground
freshly ground black pepper
100.00 g cheddar cheese — grated
2.00 eggs — seperated
100.00 ml breadcrumbs — white, fresh
1.00 tomatoes — sliced

Method:

Preheat the oven to 180 ºC (350 ºF). Grease an ovenproof dish. Break cauliflower into florets and boil in a little salted water until just tender. Drain. Melt the butter in a saucepan. Stir in the cake flour and blend until smooth. Heat, stirring continuously, for about 1 minute, but do not let the flour go brown. Slowly stir in the milk and heat, stirring continuously, until the sauce comes to the boil and thickens. Remove from the heat and season with mustard powder, nutmeg and salt and pepper to taste. Add half the Cheddar cheese and mix until cheese has melted. Beat egg yolks lightly and stir into mixture. Beat egg whites until soft peaks form and fold into the mixture. Add cauliflower and mix lightly. Spoon into prepared dish. Combine breadcrumbs and remaining cheese and sprinkle over cauliflower mixture. Arrange tomato slices on top and season with salt and black pepper. Bake for about 30-40 minutes or until golden brown. Serves 4-6.
