Carrot and oat loaf

Ingredients (9)

4-6 carrots — peeled
105 g flour — brown bread
105 g flour — cake
2 ml Bicarbonate of soda
5 ml Baking powder
60 ml oats — rolled
3 eggs — large
130 ml sunflower oil — canola oil
40 g brown sugar

Method:

Grate the carrots finely and squeeze out most of the juice. Grate enough carrot to fill 250ml.

Mix the flours, bicarbonate of soda, baking powder and oats together. Add 5ml salt.

Whisk the eggs and oil together. Stir in the sugar and the carrots. old into the flour mixture. Stir gently to combine, taking care not to overmix.

Spoon into a greased and lined loaf tin. Sprinkle the top with extra oats. Bake in a preheated oven for one hour or until a skewer inserted comes out clean. Best eaten on the day of baking.
