400.00 g pasta — cavatappi
15.00 ml fresh chillies — 573
3.00 onion — sliced
250.00 g bacon — rindless streaky, diced
250.00 g button mushrooms — sliced
4.00 eggs — large
500.00 ml cheddar cheese — grated

Method:

Cook pasta in 4 litres of boiling salted water until al dente. Drain and set aside. While pasta is cooking, heat oil in a saucepan and fry onions for 2-3 minutes until transparent. Remove from pan and fry bacon until cooked. Return onions to pan along with the mushrooms, and cook for a minute. Add to the cooked pasta.
In a separate bowl, whisk together eggs and cheese and pour over hot pasta. Stir for 2-3 minutes until the egg has coagulated. Season with salt and freshly ground black pepper and serve immediately. Serves 6.
