Caramelised citrus and vanilla rice pudding

Ingredients (8)

45 ml butter
125 ml sugar
125 ml arborio rice
625 ml milk
250 ml cream
vanilla — pod, seeds only
lemon — zest only
5 cardamom — seeds

Method:

Heat the butter and sugar in a saucepan over a low temperature until the sugar has melted. Continue stirring until it turns a light caramel colour.

Stir in the rice until thoroughly coated with butter and sugar. Add the milk, cream, vanilla seeds, lemon zest and cardamom seeds and stir until the mixture begins to boil. Reduce the heat and simmer the rice for 30 minutes or until cooked, stirring occasionally. Once the rice has cooked, the mixture should still contain a fair amount of sauce. Garnish with the lemon zest and serve immediately.
