Ingredients (12)

300.00 ml milk
80.00 g castor sugar
3.00 eggs — large
10.00 ml vanilla — essence
85.00 g flour
50.00 g butter
6.00 dessert apples — peeled, cored, sliced into rings
cinnamon — ground
60.00 ml brandy — optional
1.00 lemon — zest only
icing sugar
ice cream — or whipped cream

Method:

Put milk, half the sugar, eggs, vanilla and flour in blender jug. Blend for 30 seconds and again for 20 seconds to make a smooth batter. Or beat ingredients in a bowl with a wire whisk.
Butter a 1,5 litre shallow ovenproof dish.
Heat butter in frying pan until it foams. Add apple slices and fry quickly until they begin to brown. Stir in cinnamon, brandy and remaining sugar, stirring well until the sugar has dissolved and apples begin to caramelise.
Using a slotted spoon, transfer to dish, spreading evenly. Stir pan juices into batter and pour over apple. Sprinkle with lemon rind.
Bake in preheated 175 ºC oven for 30 minutes until batter is puffed and nicely browned. Dust with icing sugar and serve warm with ice cream or whipped cream.
