Caramel ice cream

    Nestlé Caramel Treat
  • 250
    sour cream
  • 410
    Nestlé Ideal Evaporated Milk, chilled
  • 10
    vanilla or caramel essence
  • 2
    large egg whites
  • pinch of salt
  • 5
    freshly squeezed lemon juice


1. Beat together the caramel and sour cream until smooth. 2. Whisk evaporated milk until stiff and beat in the essence. Fold in the caramel and sour cream mixture. 3. Clean out the mixing bowl and whisk the egg whites with a pinch of salt until stiff. Whisk in the lemon juice. Fold into the first mixture. 4. Pour into a large 3 litre container. Cover and freeze overnight.
