  • nasturtium seeds
  • wine vinegar
  • olive oil


Pick nasturtium seeds while still green. Place in a glass jar and cover to 2 cm above seeds with a good wine vinegar. Leave, uncovered, until seeds have all risen and are floating above base of jar. Remove seeds from vinegar and rinse in cold water. Place in smaller jars, cover with good olive oil and seal. Allow to stand for 3 to 4 days before use.
