Cape beef curry

    1 onion, chopped

    6 garlic cloves, chopped

    3 cm fresh ginger, finely chopped

    1 can tomato and onion mix

    red curry paste

    1 lemon, quartered

    1 can coconut cream
  • 0
    salt and freshly ground black pepper
  • 0
    fresh coriander for garnishing


Heat half the butter in a large pan and brown the meat cubes. Remove from the pan and set aside. Saute the onion, garlic and ginger in the same pan until the onions are translucent. Add the tomato and onion mix and bring the mixture to the boil. Add the curry paste and remaining butter and cook until the sauce begins to thicken. Return the meat to the pan and add the lemon and coconut cream. Simmer until the meat is tender and the sauce has thickened. Season with salt and pepper and garnish with fresh coriander. Serve with rotis and sambals.
