2.00 orange — lemons or grapefruit
30.00 g sugar
30.00 ml water

Method:

1. Cut the rind off of one or two oranges, lemons or grapefruit. Slice rind into thin strips, or use a citrus zester. As an alternative, use sliced citrus fruit for candied slices.
2. Blanch the rind in boiling water for 2 minutes.
3. Heat sugar and water in a saucepan and add blanched rind. Boil until all the water has evaporated. Use as an attractive garnish on cakes or desserts.
