Ingredients (11)

200.00 g rice — long grain
3.00 red chilli — sliced
5.00 ml lemongrass — sliced
30.00 ml fresh coriander — chopped
2.00 garlic — cloves, crushed
100.00 g calamari — tubes
30.00 ml lemon juice — or fresh lime juice
15.00 ml fish sauce
5.00 ml sugar
salt and white pepper — to taste
spinach — shredded

Method:

Steam or boil the rice, with the chillies, lemon grass, coriander and garlic for about 20 minutes or until tender. Stir.
Cut the calamari tubes open and score the flesh lightly. Cut into 5 x 1 cm strips. Mix into the rice. Steam or boil for five minutes, empty the rice and calamari mixture into a large bowl. Stir in the lime juice, fish sauce, sugar and seasoning to taste.
Set aside to cool, then serve on a bed of shredded spinach.
