Ingredients (8)

sunflower oil — for frying
300.00 g calamari — crumbed, frozen
4.00 slices bread — thick, crusty, toasted
1.00 red onion — peeled, sliced into rings
lettuce — to garnish
CORIANDER MAYONNAISE
45.00 ml fresh coriander — chopped
1.00 fresh chillies — minced
60.00 ml mayonnaise

Method:

Combine coriander, chilli and mayonnaise well.

Heat oil in a deep frying pan until hot.
Deep fry calamari rings, a few at a time, for no more than 2 minutes (otherwise calamari will be tough).
Do not overcrowd pan.
Drain on paper towels.

Spread mayonnaise on warm toasted bread, top with onion rings, calamari rings and lettuce and serve.
