Cajun marinade

    ground allspice

    cayenne pepper
  • 15
    ml
    black peppercorns, crushed
  • 10
    ml
    ground cinnamon
  • 100
    ml
    tomato purée
  • 100
    ml
    oil
  • 15
    ml
    balsamic vinegar
  • 2
    cloves garlic, crushed
 

Method

 
Blend all ingredients in a mixing bowl. Mix well and pour into a glass bottle with a screw top. The marinade keeps well for two weeks in the fridge. Makes 250 ml marinade.
