Café de olla (Mexican-style coffee)

  • 90 ml freshly ground coffee
  • 1.75 litres water
  • 1 stick cinnamon
  • 2 ml vanilla essence
  • sugar to taste


Place coffee, water, cinnamon, vanilla essence and sugar in a pot and bring to the boil.
Turn down to a low heat and allow to simmer for a few minutes, until the aromas are released and the coffee reaches the desired strength.
Café de olla is usually served black and accompanied by some type of sweet bread or cake.
