Caesar spinach salad

  • 1
    packet of baby English spinach leaves
  • olive oil
  • 1
    small punnet of cherry tomatoes
  • 5
    spring onions, chopped
  • 1
    small tin or jar of anchovies, drained
  • 8
    strips of rindless streaky bacon, grilled and cut into pieces
  • 250
    readymade croutons
  • Parmesan cheese shavings
  • balsamic vinegar


Place the spinach leaves in a salad bowl and drizzle with a little olive oil.
Toss well to coat, then add the tomatoes, spring onions, anchovies and bacon.
Top with the croutons and Parmesan cheese and serve immediately, accompanied by olive oil and balsamic vinegar.
