Caesar salad with grilled chicken

  • 6
    deboned chicken breasts
  • 90
    chicken marinade
  • freshly ground black pepper to taste
  • 250
    bacon rashers
  • 75
    olive oil
  • 1
    clove garlic, crushed
  • thick slices white bread (crusts removed, cubed)
  • 2
    cos lettuces, broken into leaves
  • 200
    bought Caesar salad dressing
  • fresh Parmesan cheese, thinly sliced


Switch on the oven grill. Brush the chicken on both sides with the marinade and season with pepper. Make four incisions in every chicken breast and place together with bacon on a baking sheet and grill in the oven for about 10 minutes on each side. Remove the bacon once it is crisp. Pour the olive oil onto a baking sheet and add the garlic. Heat under the oven grill. Place the bread cubes in the oil, stir to coat with the oil and return to the oven. Keep the oven door ajar and take care the bread does not burn. Stir occasionally and grill until golden brown all over. Arrange the lettuce leaves on 6 plates. Place the croutons on top and moisten with the salad dressing. Serve immediately with chicken breasts, the bacon and Parmesan cheese. Serves 6.
