Ingredients (12)

180.00 g carrots — scraped and grated
175.00 g cabbage — shredded
175.00 g red onion — sliced into rings
1.00 red chilli — deseeded and chopped
8.00 chopped
2.00 lemons — zest and juice
60.00 ml sunflower oil
45.00 ml black mustard seeds
30.00 ml sesame seeds
60.00 ml fresh coriander — finely chopped
0.00 sea salt and freshly ground black pepper
0.00 fresh coriander — to garnish

Method:

Mix the vegetables, chilli, mint and lemon juice and rind in a bowl.
Heat the oil and stir-fry the seeds until the mustard seeds begin to pop.
Add the seeds to the vegetable mixture along with the chopped coriander. Mix well.
Season to taste with salt and pepper and garnish with extra coriander.
