Ingredients (9)

3.00 butternut — peeled, cubed
2.00 stock cube — vegetable or chicken
600.00 ml water
500.00 ml milk
salt
freshly ground black pepper
nutmeg — ground
ginger — ground
cinnamon — ground

Method:

Cook the butternut in the stock cubes dissolved in water, until soft. Drain the butternut and reserve 300 ml of the stock. Process butternut in a food processor until smooth. Add the stock, milk and seasonings to taste and stir thoroughly. Strain through a sieve. Serve garnished with a whirl of cream.
