250.00 ml flour — self-raising
salt — pinch
15.00 ml butter — or margerine
250.00 ml sugar
4.00 eggs — extra large, whisked
1.00 Litres Buttermilk — or milk
8.00 green fig preserve — reserve syrup

Method:

Preheat the oven to 180 ºC and spray a deep 21 x 30 cm ovenproof dish with non-stick spray or grease lightly with butter or margarine. Sift the self-raising flour and salt. Cream the butter and sugar and beat in the eggs one at a time. Beat in the buttermilk. Add the egg mixture to the flour and beat until smooth. Turn the batter into the prepared dish and bake for about 50-60 minutes until set and golden brown on top. Serve warm with figs and syrup.
Serves 8.
