Ingredients (13)

SYRUP
2.00 kg sugar
1.00 water
50.00 ml golden syrup
2.00 cinnamon — stick
2.00 ml Cream of tartar
2.00 ml Tartaric acid
DOUGH
600.00 g flour — cake
30.00 ml Baking powder
salt — pinch
1.00 ml nutmeg — ground
65.00 ml butter
500.00 ml Buttermilk
oil — for deep-frying

Method:

Mix all the ingredients for the syrup in a large saucepan. Heat, while stirring continuously until the sugar has melted. Bring to the boil and boil far 10 minutes without stirring. Cool and chill until ice cold.
Sift the cake flour, baking powder, salt and nutmeg together. Rub in the butter until the mixture resembles breadcrumbs. Add the buttermilk and mix to form a soft dough. Knead well and wrap in plastic wrap. Leave to rest for one hour.
Roll out the dough until 3-5 mm thick and cut into strips 4 cm wide. Cut each strip into 7 cm lengths. Cut each strip into three strands, leaving the strip intact at the top. Plait each koeksister loosely and press the three strands firmly together at the bottom.
Fry in heated oil until cooked and golden brown.
Plunge into ice-cold syrup immediately. Leave in the syrup for a few minutes and remove with a slotted spoon.
