Buttered onions with melted cheese

    large onions, peeled

    fresh thyme leaves, chopped
  • 150
    grated Cheddar cheese
  • salt and freshly ground black pepper
  • chutney, pickles and crusty bread

Bring a large pot of water to the boil, salt it and then add onions. Turn the heat down to simmer and leave the onions to cook gently until they are soft to the point of a knife, about 20 minutes. Lift them out and drain. Place the onions, which will be a little tender, into a roasting tin. Smear with the butter and season with the chopped thyme leaves, salt and black pepper. Bake in a preheated 180 ºC oven until they are golden and melting, for about 20 minutes, spooning the butter over them from time to time as they cook. Scatter the grated cheese over the cooked onions and return to the oven until the cheese starts to melt. Serve hot, with chutney or pickles and crusty bread, spooning any melted cheese left in the pan over the onions.
