Butterbean balls

  • 410
    (1 tin) butterbeans, drained
  • 2
    rashers bacon, finely chopped
  • 1
    onion, finely chopped
  • 5
    slices white bread, crumbled
  • 1
    extra-large egg, beaten
  • 5
    lemon juice
  • salt and freshly ground black pepper to taste
  • dried breadcrumbs
  • oil for frying


Process the beans, bacon, onion and fresh breadcrumbs well.
Add the egg, lemon juice, salt and pepper.
Form into small balls and roll in the dried breadcrumbs.
Shallow or deep-fry in hot oil until golden.
Drain and serve with salad.
