Ingredients (9)

410.00 g butterbeans — tinned
2.00 bacon — rashers, finely chopped
1.00 onion — finely chopped
5.00 bread — white, sliced and crumbled
1.00 eggs — extra-large, beaten
5.00 ml lemon juice
0.00 salt and freshly ground black pepper — to taste
0.00 breadcrumbs — dried
0.00 oil — for frying

Method:

Process the beans, bacon, onion and fresh breadcrumbs well.
Add the egg, lemon juice, salt and pepper.
Form into small balls and roll in the dried breadcrumbs.
Shallow or deep-fry in hot oil until golden.
Drain and serve with salad.
