Butter bean salad with sage

    butter beans
  • 1
    mild red onion, finely chopped
  • 3
    cloves garlic, crushed (optional)
  • olive oil to taste
  • fresh lemon juice to taste
  • salt and milled pepper
  • 12
    rashers back bacon
  • 30
    chopped fresh sage


Drain beans and place in a bowl with onion and garlic. Drizzle with olive oil and lemon juice and season to taste. Preheat grill or frying pan. Cook bacon until crisp, adding sage about 1 minute before bacon is done. Chop bacon and toss into salad, with sage. Serve immediately, with wedges of ripe tomato and crisp Italian bread.
