Butter bean salad with sage

Ingredients (8)

820.00 g butter beans
1.00 red onion — finely chopped
3.00 garlic — cloves, crushed
olive oil — to taste
lemon juice
salt and freshly ground black pepper
12.00 bacon — back rashers
30.00 ml fresh sage — chopped

Method:

Drain beans and place in a bowl with onion and garlic. Drizzle with olive oil and lemon juice and season to taste.
Preheat grill or frying pan. Cook bacon until crisp, adding sage about 1 minute before bacon is done. Chop bacon and toss into salad, with sage.
Serve immediately, with wedges of ripe tomato and crisp Italian bread.
