Bulgur wheat and salmon salad

    sesame or sunflower oil
  • 1
    lemon, juice and zest
  • 2
    (or more to taste) chilli powder
  • 200
    bulgur wheat
  • 1
    tin pink salmon
  • 1
    pawpaw, peeled, seeded and cubed (optional)

    pumpkin seeds, toasted
  • 30
    fresh rocket or lettuce leaves


10 minutes
Whisk the oil, lemon juice, zest and chilli powder to make a dressing.
Season to taste with salt and freshly ground black pepper.
Cook the bulgur wheat according to the packet instructions and toss with other ingredients.
Drizzle the dressing over the salad and serve with slices of crusty bread.

Replace the bulgur wheat with couscous to make a salmon and couscous salad.
For an extra-nutty flavour, add 100 g mixed nuts and lots of freshly chopped mint and parsley.
