Ingredients (8)

80.00 ml sesame oil — or sunflower oil
1.00 lemon — zest and juice
2.00 ml chilli powder
200.00 g bulgur wheat
1.00 salmon — tinned, pink
1.00 papaya — peeled, seeded, cubed
50.00 ml pumpkin seeds — toasted
30.00 g rocket — or lettuce leaves

Method:

Whisk the oil, lemon juice, zest and chilli powder to make a dressing.
Season to taste with salt and freshly ground black pepper.
Cook the bulgur wheat according to the packet instructions and toss with other ingredients.
Drizzle the dressing over the salad and serve with slices of crusty bread.

VARIATION
Replace the bulgur wheat with couscous to make a salmon and couscous salad.
For an extra-nutty flavour, add 100 g mixed nuts and lots of freshly chopped mint and parsley.
