  • bulgur wheat
  • cold water to cover


Also known as burghul, this is wheat that has been pre-cooked, dried and crushed. It is extremely quick and simple to prepare, and only needs to be soaked before use. For four people, you will need about 100 g bulgur to serve hot in pilafs or cold in salads like taboulleh. Place the bulgur into a large bowl. Add enough cold water to cover generously. Allow to stand for 20-30 minutes.
