Ingredients (10)

12.00 chicken — wings
sunflower oil — for frying
60.00 ml butter
15.00 ml Tabasco sauce
BLUE CHEESE DIP
125.00 ml sour cream
125.00 ml mayonnaise
30.00 g blue cheese
30.00 ml fresh parsley — chopped
30.00 ml sherry — medium-cream
2.00 ml Worcestershire sauce

Method:

To prepare the chicken, cut each wing into two parts at the joints. Cut off the tips of the wings and discard (or use to make chicken stock).
Heat a 5 cm layer of oil in a frying pan and fry half the wings for 10 minutes, or until golden brown. Drain on paper towel. Repeat with remaining wings.
BLUE CHEESE DIP:
Mix all the ingredients together.
To serve, melt butter over a low heat and add the Tabasco sauce. Arrange the hot chicken wings on a platter and drizzle with the melted butter sauce.
Serve immediately with blue cheese dip.
