1.00 kg brussel sprouts — trimmed
60.00 ml fresh chillies — 573
8.00 fresh mint — finely chopped
2.00 lemon — juice only
250.00 g green beans — trimmed
250.00 g chicken — shaved
110.00 g feta cheese
0.00 sea salt and freshly ground black pepper

Method:

Cook brussel sprouts in boiling, salted water until tender (about 10 minutes), then drain.
Place brussel sprouts in a large bowl with olive oil, mint and lemon juice.
Marinate for about 30 minutes.
Blanche green beans in boiling water and refresh under cold running water.
Divide shaved chicken between four to six plates, pile the brussel sprouts and beans on top and crumble the feta cheese over them.
Drizzle with remaining dressing and seasoning.
