Brunch oven bake

  • 12
    prime-quality sausages
  • 5
    onions, peeled and halved
  • 3
    red peppers, seeded and halved
  • 30
    olive oil
  • few sprigs fresh rosemary
  • 12
    fresh brown mushrooms
  • 225
    plum or cherry tomatoes
  • 45
    pesto (optional)
  • a few fresh basil leaves
  • salt and freshly ground black pepper


Preheat the oven to 200 ºC. Place the sausages, onions and peppers in a large oven pan and sprinkle with the olive oil. Scatter the rosemary sprigs on top and bake for about 20 minutes, shaking the pan every now and then. Add the mushrooms and tomatoes, and bake for another 25-30 minutes. Remove from the oven, stir in the pesto and fresh basil leaves, and season to taste with salt and freshly ground black pepper. Serve immediately with buttered toast. Serves 6-8.
