Brown Betty ice cream

  • 2
    slices brown bread
  • 50
    roasted coconut
  • 25
    dried apricots, chopped
  • 1
    quantity basic vanilla ice cream (see recipe)


1. Put the brown bread into a food processor or press through a sieve until you have fine crumbs. Place on a baking tray in a preheated oven at 200 ºC until crumbs are lightly browned. 2. Mix roasted coconut, 50 g breadcrumbs and apricots together. 3. Mix into basic vanilla ice cream and freeze.
