Ingredients (8)

450.00 g broccoli — stems
HOLLANDAISE SAUCE
2.00 eggs — just the yolks
1.00 orange — zest only
30.00 ml orange juice
5.00 ml vinegar — white
10.00 ml wholegrain mustard
sea salt and freshly ground black pepper
125.00 ml butter — melted

Method:

Boil the broccoli in a little salted water for a few minutes until tender but not soft. Drain well and transfer to a serving dish.
Blend the egg yolks, orange juice, vinegar and mustard in a food processor. Process until smooth and well blended. Season with salt and pepper to taste.
Keep the food processor running while adding small quantities of the melted butter at a time through the spout. Process until well blended and pour over the hot broccoli just before serving.
