Broccoli with orange hollandaise sauce

    g
    broccoli stems
  • HOLLANDAISE SAUCE
  • 2
    egg yolks
  • 1
    orange, grated rind
  • 30
    ml
    orange juice
  • 5
    ml
    white vinegar
  • 10
    ml
    wholegrain mustard
  • salt and freshly ground black pepper
  • 125
    ml
    butter, melted
 

Method

 
Boil the broccoli in a little salted water for a few minutes until tender but not soft. Drain well and transfer to a serving dish. Blend the egg yolks, orange juice, vinegar and mustard in a food processor. Process until smooth and well blended. Season with salt and pepper to taste. Keep the food processor running while adding small quantities of the melted butter at a time through the spout. Process until well blended and pour over the hot broccoli just before serving.
