Ingredients (11)

500.00 g broccoli — broken into florets
sea salt and freshly ground black pepper
1.00 leek — large, cleaned,thinly sliced
1.00 red pepper — deseeded and cut into thin strips
oil
5.00 ml curry powder
5.00 ml turmeric
10.00 ml water — boiled
125.00 ml mayonnaise — thick
125.00 ml cream
almonds — toasted

Method:

Boil the broccoli in a small amount of water until just tender and firm. Alternatively, steam or microwave until tender. Drain and transfer to a dish. Season with salt and pepper.
Rapidly sauté the sliced leek and pepper in a little oil until glossy. Mix with the broccoli.
Place the curry powder and turmeric in a cup. Mix with boiling water and leave for 5 minutes. Mix the mayonnaise and cream and stir in the curry mixture.
Pour the salad dressing over the vegetables and sprinkle with nuts.
