Broccoli bake

  • olive oil cooking spray
  • about 600 g broccoli, cleaned and florets separated from stalks
  • 1/2 tin (285 g) condensed cream of mushroom soup
  • 1/2 cup low fat mayonnaise
  • 1/4 cup Lite evaporated milk
  • 1/4 cup reduced fat Cheddar cheese, grated
  • 2 egg whites, lightly beaten
  • 1/4 cup breadcrumbs
  • 1 tbsp olive oil


Preheat oven to 170 °C.
Coat a 25 cm square roasting pan with cooking spray.
Lay broccoli evenly in pan.
In a medium bowl, combine soup, mayonnaise, evaporated milk, cheese and egg whites until well mixed.
Pour over broccoli.
Using a fork, combine breadcrumbs with olive oil in a small bowl until thoroughly mixed.
Sprinkle over soup and broccoli mixture.
Bake for 40-45 minutes or until golden.
