Ingredients (9)

30.00 ml butter
1.00 onion — small, chopped
200.00 ml stock — vegetable
300.00 g broccoli — cut into florets
1.00 potatoes — cubed
1.00 green pepper — seeded and cubed
20.00 ml fresh parsley — chopped
20.00 ml lemon juice — fresh
125.00 ml feta cheese — crumbled

Method:

Heat butter in a saucepan and sauté onion for 1-2 minutes until soft. Add remaining ingredients, except lemon juice and feta, and bring to the boil. Reduce heat and simmer for 10 minutes until vegetables are tender.
Pour into a processor and liquidise until smooth. Add lemon juice and season to taste. Sprinkle with feta and serve immediately. Serves 4.
