Ingredients (7)

125.00 ml cashew nuts — toasted
1.00 garlic — cloves, crushed
750.00 ml broccoli — florets, steamed
125.00 ml parmesan cheese — grated
100.00 g parmesan cheese
4.00 ml freshly ground black pepper — to taste
60.00 ml fresh chillies — 573

Method:

1. Place the nuts and garlic in a food
processor and pulse until fine. Add
the broccoli, Parmesan cheese and
freshly ground black pepper. Add
the olive oil in a thin stream while
the machine runs until the pesto
reaches the desired consistency.
Add more black pepper, olive oil or
salt if necessary.

Makes: 500 ml
