Broccoli and cashew pesto

    ml
    toasted cashew nuts
  • 1
    garlic clove, crushed
  • 750
    ml
    broccoli florets, steamed
  • 125
    ml
    grated
  • 100
    g
    Parmesan cheese
  • 4
    ml
    freshly ground black pepper, to taste
  • 60
    ml
    olive oil
 

Method

 
1. Place the nuts and garlic in a food processor and pulse until fine. Add the broccoli, Parmesan cheese and freshly ground black pepper. Add the olive oil in a thin stream while the machine runs until the pesto reaches the desired consistency. Add more black pepper, olive oil or salt if necessary.
Makes: 500 ml
