Ingredients (15)

SALAD DRESSING
45.00 ml lemon juice
1.00 ml salt
1.00 ml sugar
100.00 ml fresh chillies — 573
45.00 ml fresh parsley — finely chopped
4.00 spring onions — finely chopped
SALAD
65.00 ml sunflower oil
65.00 ml fresh chillies — 573
45.00 ml water
2.00 ml dried basil
600.00 g aubergine — baby, sliced
lettuce — leaves
3.00 tomatoes — sliced
250.00 ml edam cheese — low fat, diced
black pepper — freshly ground

Method:

Blend all the salad dressing ingredients and set aside.
Switch on the oven grill. Blend the oils, water and basil. Pour the mixture into an oven pan and arrange the brinjal slices in the pan. Place under the heated oven grill and grill until golden brown and tender. Turn while grilling. Cool.
Arrange the lettuce leaves in a serving dish and arrange the brinjal and tomato slices on top. Sprinkle the diced cheese on top and season with black pepper. Moisten with the salad dressing.
Serve with bread rolls.
Serves 6.
