Brinjal and mozzarella bake

Ingredients (6)

4.00 aubergines — sliced
410.00 g tomato and onion mix
2.00 garlic — cloves, crushed
15.00 ml fresh marjoram
sea salt and freshly ground black pepper
300.00 g mozzarella cheese — thinly sliced

Method:

Switch on the oven grill.
Arrange the brinjal slices on a baking sheet and sprinkle with salt. Leave for 30 minutes. Remove the salt and excess water with paper towelling and brush with a little oil. Grill on both sides until the brinjal slices just begin to change colour.
Preheat the oven to 180ºC (350ºF). Spray an ovenproof dish with non-stick spray.
Mix the tomato and onion mix with the garlic and seasonings.
Arrange alternating layers of brinjal and mozzarella slices in the oven dish. Pour over the tomato sauce, ending with a layer of cheese and brinjal. Bake for 30 minutes or until the cheese has melted.
Serves 6.
