Breton almond tart

    ground almonds
  • 4
    extra large organic eggs
  • Pinch of salt

Pre-heat oven to 190 C.
Line a tart tin with sweet pastry and spread with apricot jam.

Beat the  butter with the sugar, adding the eggs one at a time, whisking well after each addition.

Stir in the ground almonds and a pinch of salt.

Put into the tart tine and bake for 30 - 40 minutes.
