Bacon and egg tramezzinis

  • 250
  • eggs - 1 per person
  • tomatoes - 2 thick slices per person
  • grated cheddar cheese
  • 2-3
    large onions(use for vegetarian option also)
  • Vegetarian option:
  • 1
    each colored pepper - red, yellow and green
  • mozarella cheese

Cook all the different ingredients and place it all on the table. Everyone assembles their own tramezzini and all you have to do is to grill it in your griddle pan or flat toaster.
Slice thick slices, drizzle with olive oil, a splash of balsamic vinegar, salt, pepper and a pinch of sugar. Pop under the griller until cooked and caramelized.
Slices thinly and sauté in some oil until soft but not mushy. I season with salt, pepper, fresh thyme and a pinch of sugar to help caramelizing it.
Pop peppers in a very hot oven or char on your gas flames until they are black and charred all over. Place in a glass bowl, cover with cling film and allow to sweat. After about 30 minutes, scrape off all the charred bits and slice the peppers in thin strips.
All this prepping can be done tonight, allowing you to wake up tomorrow morning and just have a glorious relaxing breakfast.
