Brazil nut tiramisu

  • 500
    mascarpone cheese
  • 100
    castor sugar
  • 80
    Brazil nuts, toasted, skins rubbed of and finely chopped
  • 250
    fresh cream, whipped
  • 125
    Boudoir biscuits
  • 125
    finely grated milk chocolate
  • 125
    Frangelico (nut liquour) or brandy mixed with 125 ml strong prepared coffee
  • Hot chocolate or cacao powder

Mash the mascarpone with the sugar and the nuts.
Mix until smooth then fold in 4 spoons of whipped cream to loosen the cheese a little.
Now, fold in the rest of the whipped cream and set aside.
Dip the biscuits quickly in the boozy-coffee mixture and place in a single layer in a suitable oblong glass dish with a flat bottom.
Sprinkle with the grated or crumbled chocolate.
Spoon the cream mixture over the layer of biscuits and smooth the top. Sprinkle the top with a thick layer of hot chocolate powder or cacao.
Cover with cling film and chill well before serving.
