Ingredients (10)

125.00 g blueberries
125.00 g raspberries — punnet
200.00 g strawberries — halved
3.00 peaches — sliced
1.00 apples — large, grated
75.00 ml sugar
50.00 ml brandy
topping: chilled butter
225.00 g flour — self-raising
70.00 g sugar
130.00 ml Buttermilk

Method:

1. Place the fruit in a saucepan along
with the sugar and the brandy. Simmer
it gently over a low heat until the juices
run from the berries. Remove from
the heat and pour into a greased
ovenproof dish.

2. Topping Rub the cold butter into
the flour until the mixture resembles
coarse breadcrumbs. Stir in the sugar
and a pinch of salt. Add the buttermilk
to make a scone-like mixture. Use
your hands to roll small balls of
dough and scatter them on top of the
fruit. Bake in a preheated oven for
30 minutes until golden brown. Serve
this fruit cobbler with whipped cream
or ice cream.
